The Veggies Are Growing Quickly
Watching the veggies grow every day it can be hard to tell how much they are growing but over the last week we have seen an exponential growth in so many of the spring veggies.
It has been almost the perfect weather with the past few days in the high-70s and sunny following a little bit of rain we got on Saturday.
Combined with the days getting longer as we are over halfway to the longest day of the year and each leaf on the plant increasing the growth we hopefully should have lots of veggies being ready to harvest.
Over the next eight weeks we will have a bounty of spring veggies before some of them go to flower once the temperatures get much warmer.
Having had a few warm spells mixed in with the cold days confused some of the veggies like one planting of bok choy and arugula which are already going to flower.
Fortunately we knew we wouldn’t have lots of time to harvest each planting in the spring so the next plantings of both are ready to harvest.
Last week we finished harvesting the last of our overwintered lettuce and now we have begun to harvest the lettuce we transplanted in February which has a few more varieties in it.
We have lots of green little gems along with a bronze and new red variety. They are all very delicious with a little crunch to them, perfect to mix a few together in a salad.
For the head lettuces we have a decent amount of red butter along with red leaf and green leaf varieties that can go on a sandwich or be cut once and all fall apart to quickly make a salad.
Having the first tomatoes staked and trellises we have had to check what date it is since it is the earliest we have done that. They needed the string to keep them growing straight up after we put larger plants than normal into the ground that have grown rapidly in the last few weeks. There are even a few flowers on the sungolds.
All of the tomatoes we plant through the season are in the same area so we are able to see how each planting is growing.
The second planting is growing well and should be boosted by this warm weather and we transplanted our third planting next to them yesterday.
It is our largest planting of tomatoes of the season with a few more varieties than our second planting and just more of each variety.
Sometime in mid-July will be when we start to harvest the third planting which is when everyone is savoring ripe local tomatoes and wanting as many as possible.
